De facto, the French Culinary Institute is America's best culinary school. Perhaps, the world's best culinary school?! Legendary names like Jacques Pépin, Dean of Special Programs, Alain Sailhac, Executive Vice President and Senior Dean of Studies, and André Soltner, Dean of Classic Studies. A native of Bourg-en-Bresse near Lyon, Pépin's most distinctive  experience, charisma a La Maurice Chevalier, blended  with personal warmth shaped his world fame and his intoxicating mass appeal.

 


"He began his career at his parents' restaurant and served his apprenticeship at the Grand Hôtel de L'Europe before moving to Paris to work at the Meurice and Plaza-Athénée. Pépin has served as personal chef to three French heads of state, including Charles DeGaulle. In the United States he worked at New York's Le Pavillion before joining Howard Johnson in research and development. The author of 18 books including the seminal La Technique, La Methode, and, most recently, Jacques Pépin Celebrates. Pépin is familiar to many Americans from his numerous TV programs."-Data: FCI.

Whatever, he touches, Alain Sailhac turns it into gold, into stars and pure magic. Give him a small time eatery and he will transform it into the private dining room of Louis XIV and an extravagant imperial reception by Napoleon Bonaparte! Sailhac is  the world's most  outstanding culinary artist.

"Sailhac personifies the spirit of The FCI. He's everywhere at once, visiting classrooms, fine-tuning the curriculum, providing one-on-one counseling, helping students reach for and achieve excellence. Sailhac began his career 40 years ago in France cooking at the Hôtel Claridge and Hôtel Normandie. He then worked throughout the world before settling in New York City. He led the kitchen at Le Cygne, which earned the first four-star rating ever awarded by the New York Times. He went on to become the executive chef at Le Cirque, which, to no one's surprise, also earned a four-star rating. The Master Chefs of France named Sailhac Chef of the Year in 1997" -Data: FCI.
